Preparation of the pesto
Cut the mozzarella cheese in slices or the tofu in small cubits. Once cut, put them into a blender and add some olive oil so that the cheese or tofu is covered with oil. Add some basil leaves and blend for 2 minutes so you end up with a more dense mass.
Once the pesto is done put it into a bowl and keep ready for the assembly of the salad.
Preparation of the salad
Remove the upper end of the tomato and cut the tomato into slices; approximately 1 cm (0.4) in thickness.
Now also cut the remaining cheese of tofu in slices and form a circular shape if they are not already this way – also with a thickness of about 1 cm.
Once the cheese or tofu and the tomatoes are cut they are now ready for the assembly of the caprese salad.
Assembly of the salad
In the middle of a plate pour some olive oil and spread it with a spoon. Afterwards place a slice of tomato and above it a slice of mozzarella cheese or tofu and add some pesto with a spoon.
Repeat this process: each time a slice of tomato, cheese or tofu and pesto.
To finish the salad, the last slice can be decorated in a way free of your choice. Some left over pesto and basil can be used for decoration.
